The idea belongs to a Spanish company - manufacturer "Josper" created in 1970 by Pere Juli and Josep Armangue.

It was an enclosed charcoal oven where food was cooked at high temperatures. The oven combined the functions of a charcoal grill and a barbecue and the dishes cooked in it remained juicy and fragrant.

Over time, the name "Josper" became a household name and was picked up by other manufacturers of heating equipment. It was the name of the closed type oven used to cook meat and fish at +350 °C.

HOW THE HOSPER IS USED TODAY

Nowadays the Josper is a special kind of thermal equipment used to cook meat, fish and vegetable dishes.

The main feature of the oven grill is the ability to cook dishes indoors using wood or charcoal. During cooking, dishes get a special flavor - the aroma of light smoke, but they remain juicy and their flavor without any bitterness.

WHAT ARE THE PARTS THAT MAKE UP THE CHARCOAL OVEN 

Oven josper is a closed construction. The temperature inside the chamber reaches +350C. And the cooking process takes from 3 to 10 minutes.

The oven has thick walls, reinforced with a thermal insulation layer. Due to this, the device consumes 40% less coal compared to standard grills and grills.

Inside the chamber - metal grates, on which the pieces of meat, fish, or vegetables are placed. The height of their installation over the coals can be adjusted manually, and accordingly, to monitor the degree of roasting.

Inside there is also an ash drawer, where the ash from the burnt-out coal falls.

In the upper part of the device has installed a chimney, and in the bottom - the air intake, eliminating unpleasant odors and grease that appear during operation of the oven.

Another device installed in the hopper is a grease trap. This is where the grease that occurs during cooking drains away. It is cleaned when it gets dirty. Thanks to it, the fat does not trickle down on the floor.

HOW THE JOSPER WORKS

The principle of the charcoal oven grill is quite simple: it is loaded with charcoal, heated to the temperature required for cooking meat and fish dishes, and vegetables.

It takes 30 minutes to prepare. Then the food is placed on the grates and monitors the cooking temperature.

This indicator is fixed on the thermometer. It is regulated by means of the flaps. They can be opened a little wider to reduce the temperature inside the chamber.

More detailed instructions for the josper are prescribed by the manufacturer. He specifies the optimal temperature of the grill, the rules of heating and ignition of a particular model, the period of its operation.
