Oven-smokehouse TM UNIT is created for hot smoking of meat, fat, fish, cheese, etc.
Oven-smokehouse TM UNIT consists of a firebox and a smoking chamber. The oven is a chamber with a box for coals, grates and an ash box. The material of the chamber is steel. The smoking chamber is made of food grade stainless steel. At the bottom of the chamber is a drip chips. Smoking is done on grates or on hooks. The camera is equipped with an adjustable valve. In this case, the heating of the smoking chamber carries out from the bottom of the oven and side, passing between the walls of the chamber and the cladding, with hot air. Temperature Adjustment of temperature is performed by the upper flue damper and the lower flap of the oven. The temperature is controlled by thermometer on the door.
The advantage of this design is that the smoke from the oven does not enter the smoking chamber. This allows you to use any firewood in the firebox.
In the second version, the smoking chamber is connected to an oven. The main source of smoke is wood in the furnace. In this case, the pallet is used if necessary to enhance the odor.
Smokehouse is designed for outdoor and indoor use. When you use it indoors, the smokehouse is installed under suction ventilation hood with a hydraulic spark arrestor.
